Problems, sociocultural features and resources vary from country to country. It is therefore not possible to devise a plan of action or provide a curriculum for a food safety education programme which would be globally applicable. Each country or area considering a food safety education programme or intervention should develop a programme and plan of action that are relevant to its needs, population characteristics and infrastructure. Programme and intervention are considered as alternatives. This chapter applies both to broad national programmes for the education of consumers and food handlers, as well as to specific educational activities. There are many valuable publications on the implementation of health education programmes (1-3). This chapter aims to recommend the key elements of a plan for health education in food safety (Fig. 12), provide guidance on issues of food safety, and draw on some experiences in this area. The key elements recommended in this chapter can be applied in a national programme, as well as in training and educational activities targeted at specific groups such as small communities or the staff of food service establishments.
